Japanese iced coffee method: brew hot directly onto ice. Calculate your ice and hot water split for any recipe.

Ice Ratio

How much of your total water should be ice? More ice = brighter, more acidic. Less ice = fuller body.

Grind slightly finer than usual to compensate for reduced water volume.

The Method

  1. Add ice to your carafe/server
  2. Brew with hot water directly onto the ice
  3. The ice melts as coffee drips, chilling instantly
  4. Swirl gently to finish cooling

Why It Works

Flash chilling traps volatile compounds that would otherwise evaporate as hot coffee cools slowly. You get brighter, more complex iced coffee than cold brew.

Grind Adjustment

Go 1-2 steps finer than your normal pour-over grind. Less water = faster flow, so finer grind maintains contact time.

Iced Coffee Methods

How Japanese iced coffee compares to other methods.

Cold Brew

Time 12-24 hrs
Flavor Smooth, muted
Acidity Low

Best for: Dark roasts, chocolate/nutty notes

Brewed + Ice

Time 3-4 min + wait
Flavor Flat, oxidized
Acidity Stale

Not recommended. Aromatics escape as it cools.
